I keep my house at 75 in the summer (it’s summer 9 months out of the year here), so my coconut oil is pretty soft, and as a result, so is my dough. I’ve tried other vegan chocolate chip cookie recipes in the past, but yours are far and away the best! Instead of coconut oil, I use earth balance (vegan) butter & I do 1/2 c brown sugar, 1/2 c white sugar instead. I substituted to brown sugar with coconut sugar. But this recipe is definitely deserving of the 5 stars. And whole wheat pastry flour but turned out great. Try again with brown sugar :). I’ve been making this recipe since I found it over a year ago. Made them exactly as instructed, they turned out crumbly to the point you couldn’t pick them up, way too sweet. The second batch I made was these, with a couple of modifications to the recipe. Let cookies cool on the baking sheet for 2 minutes, then transfer cookies to a wire rack to cool. When they cooled, they have a nice crisp crust, then a soft gooey center. I find the dough to be a little crumbly when I make these, but I just smoosh it together and push the chips back in :). I haven’t tried the recipe yet, but am going to soon… I’m opening a Deli & Coffee Bar and am looking to have some Vegan options… Will review again once I’ve baked them… Just wanted to send a helpful hint out there :).
